Looks fabulous. I’m glad you explained about olive oil being able to turn into a bad fat when heated too high. Didn’t know that. I practically live on Sweet Potatoes in winter but never do anything fun with them, just bake and eat.

What is the difference between Yams and Sweet potatoes? I find the orange ones in my grocery store like the ones you are cooking with are yams. And the Sweet potatoes are more of a yellow color….Any insight?
